JOB SUMMARY: Performs Quality Control sampling, testing, and scoring. Performs Shelf Life studies. Assists in maintaining product specifications. Assists in maintaining GFSI certification, Checks and calibrates thermometers and scales.
ESSENTIAL DUTIES AND RESPONSIBILITIES:
● Maintains Shelf life studies and documents results
● Establishes and assures adherence to set specifications and standards of finished product
● Files and stores all Food Safety, Sanitation and QC data.
● Compiles data to create specification tolerances for finished product, and production equipment.
● Maintains all QC files.
● Prepares and submits daily/weekly summary reports.
● Performs daily product scoring and documents results.
● Contacts suppliers to request specification, and certificates as needed.
● Calibrates all scales daily
● Collects meat samples for lab and customers requesting monthly samples.
● Adheres to all safety, GMP and house rules
● Places product on HOLD/RELEASE
● Calibrates thermometers (handheld and portable).
● Supervises Recipe and lot code traceability.
● Informs team on new changes in recipe, raw ingredients.
● Prepares labels and lot codes for finished product.
● Glass and brittle plastic inspections.
● Maintains all documentation related to the food safety program as per USDA, FDA and regulatory agencies.
