Middle Eastern Mezze Spread!
What do you do when your garden is exploding with parsley and mint? You make tabbouleh. Then you go into the shed to grab some of those Iraqi heirloom tomatoes you can every summer to make matbukha. Then it becomes a whole spread. This selection of Mezze should serve at least 2 hungry people.
Here’s the menu:
Local Arab bread
Baba G (roasted eggplant with yogurt and tahini)
Moroccan carrots (carrots stewed with olive oil, cumin, chile, garlic, & mint)
Matbucha (Moroccan tomato “salad”)
Tabouleh
Muhammara (walnut & pomegranate “salad”)
Maamouls
Also, you can add kefta (seasoned ground beef kebab) if you want your Monday to be less meatless, or if you want to stretch it to eat on for a couple days.
