Description
Food fermentation has been around for centuries. We'll prepare 3 items. The class will be outside/socially distanced. Limited seating. About the class This is a hands-on class. We will actually be preparing the food together using our Oma-inspired recipes. We will be doing this outside and at socially distanced work areas. Seating is very limited and we are asking people to come as 2's or 3's to fill the small tables. Bring a friend and share a unique experience together. Please wear comfortable shoes and clothing that you can cook/pickle in. Also, bring sun protection, since we will be outside. We will be demonstrating 2 different fermentation methods and producing 3 different dishes. Due to the nature of fermentation, we will prepare the dishes together and then you will take them home to finish the fermentation. Your family can then share in the final product...yummm! Fermentation does require a few different pieces of equipment. I have listed them as add-ons. Please come to class with these items, or make them add-ons to your ticket and they will be here when you arrive. About the food We will be doing 3 different dishes and 2 different pickling techniques. 1) vented fermentation - Sauerkraut. Our sauerkraut recipe has won a few awards. I brought it with me from Oma. You will never want to buy commercially prepared sauerkraut again and if you don't like sauerkraut, give ours a try, you may become a fan. (Note: You will need to purchase the full fermentation set - lid and spring - to do this recipe, please see the add-ons.) 2) Basic brine - Soleier (salted eggs). A basic pickled-brined hard-boiled egg, Soleier are common snacks in Brewhouses throughout Germany. (Note: You may want to use the fermentation vented lid - lid only - that can be purchased as an add-on. You can use just a common lid, but the vented lid improves the quality of the product.) 3) Basic brine - Schweinebraten. Schweinbraten (braised brined pork) is the great-grandfather of the American pot roast, but so much more tender due to the brining. Our Schweinebraten recipe has won awards. Also, check out some of our items in the new Kellerkammer. These are listed separately as add-ons and you can buy them and take them with you. What you need to have We will supply you with all the food items you need (3 food kits). You will need to bring or buy (we are offering as add-ons): 2 wide-mouth Quart Mason Jars with lids, 1 fermentation set (lid + spring), and 1 fermentation lid (just the lid). You should buy the fermentation set and extra lid as add-ons. You can also buy the Mason jars as add-ons, or bring your own (pre-sanitized). None of these are included in the General Admission in case someone already has these items. What you need to know The environment is casual and come-as-you-are. The class lasts 4 hrs and we start on time. There is lots of time for socializing and learning as there are many natural breaks. As part of the class, you have access to the beers on tap (rotating) and to our beer stores. We ask guests to drink responsibly and hold a 3-pint cap for the class. Additional pints we ask people to make a donation. You also have access to our spirits (rotating). And we offer non-alcoholic beverages. Food is available during the class from our Bauernküche and can be purchased as an add-on item to your ticket. All of our beers, spirits, and food items are made in-house, in a food-handling certified kitchen. The class will be outdoors with proper social-distancing. We ask that you remain masked unless eating or drinking and remain at your assigned cooking area as much as possible, we want to avoid congregating or anyone getting hurt. Who we are and what we do Dahoam1516 is a private social club and school at an exclusive venue with a small private-label Brewhouse, Bier- & Hopfgarten, and numerous cozy outdoor seating areas amply separated. We offer small-format classes in home brewing and cooking with a focus on small-batch recipes and hearty Bavarian fare. We also offer select social events at our unique event space several times a year. Our classes are also available in a "we come to you" format for small groups. Great for an office teambuilding event or a unique extended family gathering. And our event space is available for rent for your special event.
