FALLS CHURCH, VA — Preservation Biscuit Company, a breakfast and lunch spot focused on biscuits, opened Tuesday in Falls Church.
Located at 102 East Fairfax Street, Preservation Biscuit is the product of Chef Jonathan Coombs, a retired Army veteran and Purple Heart recipient, and owner Tricia Barba. The restaurant offers food made from scratch with a Southern flair.
Foodies can find a variety of sweet and savory biscuits on the menu. One example is the PBC, a biscuit sandwich with fried chicken, hot honey, candied bacon, napa cabbage, smoked gouda pimento cheese and dijon mustard. During opening week, $1 of every PBC sold will benefit Homestretch, a nonprofit helping homeless families find stability.
Those with a sweet tooth can enjoy varieties like the Strawberry Shortie or Apple of Our Eyes, a biscuit with Southern fried apples. Other menu items include caesar salad, three-cheese macaroni with a biscuit crumble, sweet potato tater tots and other sides.
