The ultra-high heat not only makes everything (potatoes included) cook quickly, but the veggies get this caramelized, umami-ish vibe that is so cozy and delicious. (My mouth may or may not have started watering while I typed that. Don't judge me, OK?) This is great for chilly nights, but you can also summer-ify it by throwing in some corn, maybe some okra and tomatoes. Another idea: Omit the potatoes and serve the sausage, peppers and onions in a hot dog bun, with hot honey drizzled on top! Mmmmm… If you're not familiar with hot honey, I think you'll like it regardless of your tolerance for spice. That's because it is SO easy to customize it to whatever your tastes are. Traditionally, it's equal parts honey and hot sauce. Give it a taste, and if that's too much on you, simply add some more honey until you're comfortable with the flavor.
