Chirashi Sushi for the Toshinan Teahouse
I have been so lucky to grow up and continue to live in Birmingham, where there have been so many ways for me to access culture - a foundational moments occurred when I was 13, and I stepped into the Toshinan teahouse at the Birmingham Botanical Gardens for the first time. Thanks to a connection between Birmingham and the Urasenke tradition of tea that goes back to the 60s, I’ve been afforded numerous unique opportunities to explore the world.
Now, more than 2 decades later, this precious cultural resource needs restoration so that it can continue to be of benefit to the people of Birmingham. To that end, I’ve recruited some volunteers and we’re going to make chirashi sushi, a spring specialty - seasoned sushi rice with seasoned vegetables (lotus, burdock root, mushrooms, etc), scattered with finely sliced golden omelet and a variety of seafoods and garnishes. The proceeds, less the cost of ingredients, will be donated to the BBG’s Toshinan Restoration Fund.
1 7” box should serve 2 skinny folks or 1 Josh style eater. Not suitable for anyone with allergies to: eggs, fish, shellfish, soy, sesame
