Seating begins at 6:30pm, Dinner served promptly at 7pm. 1st course: Pancito Y Aji Verde. 2nd course: Ceviche. Red snapper, Leche de tigre, Chulpe corn. 3rd course: Papa a la Huancaína. Aji amarillo, Botija olives, Mixed greens. 4th course: Lomo Saltado. Skirt steak, Roma tomatoes, Basmati rice. 5th course: Queso Helado Y Alfajor. Coconut, Dulce de leche, Cinnamon. More about the Chef... After completing his second tour in the Middle East, Austin started his culinary career with a drive for knowledge. Graduating from Culinary Institute of America in Napa, CA in 2014, he went to work at LA’s No. 1 restaurant, Providence. There he worked for 3 yrs amongst some of the best chefs in the world, while being mentored by Chef/Owner Michael Cimarusti. Today, Austin continues his service to his country as a Navy Officer Recruiter with 16 years of combined active and reserve time. While juggling his Navy career, Austin continually pursues his passion cooking private dinners, assisting fellow chefs and providing culinary advisory.
