About Michael and the pasta.
Michael (or Maicol as his Italian friends call him ) Cusumano, left the US after graduating from UCSB in 1999 to pursue his passion for cooking and living in the Bel Paese, Italy. It was supposed to be just to attend a two year cooking school in Bologna, but it turned out a lot longer than that. He has been living and cooking professionally in Italy ever since and has worked and interned in some Italy’s finest restaurants and hotels. Highlights have been helping prepare for Maestro Luciano Pavarotti’s 70th birthday party celebration and more recently being head chef at Fiola at Dopolavoro JW Marriott Venice Resort and Spa’s fine dining restaurant.
Fresh egg pasta is made throughout all of Italy, but it really shines in the region of Emila-Romagna in central Italy. Here, it is eaten not only on special occasions, but in many households once a day. It is cooked in salted water and then tossed with or seasoned with a variety of sauces ranging from meat ragouts, fresh fish sauces, vegetables, or just simply melted butter. It is also added to soups, like rich meat broths or vegetable and bean soups.
Standard fresh egg recipe: 1 egg to 100 grams of 00 flour (explain 00 flour)
