5 course Spring dinner on March 28th
Part 3 of 12 of the, My Yard Reaction 2021 Series, is a spring dinner put on by Executive Chef Kathy Elkins and pitman Wade Elkins. This menu is inspired by some of our favorite flavors and dishes. We hope you enjoy it as much as we do.
Menu:
Salmorejo: chilled tomato, smoked almonds, smoked olives, crispy ham, crema
Empanada: smoked beef rib, chimichurri, salsa rojo
Campechana: cold smoked shrimp, lump crab, olive, avocado, confit pineapple
Hanger Steak: agro dulce brussel sprouts, smoked oyster mushroom brushed with demi glacé
Sweet: meyer lemon and cream, graham crumb, candied lemon
