Like a log flume ride at an amusement park, the wines of the Pacific Northwest are the often overlooked gems of our domestic appellations. While Californian wines may take the spotlight, with Willamette Valley in Oregon producing Pinots and Chardonnays to rival Burgundy and the Bordeaux varietals and more grown in Washington, the Pacific Northwest is one of our favorite wine growing regions in the United States. It's cuisine, itself a mixture of influences and ingredients, has provided the inspiration for Executive Chef Shawn Hartwig's Five Course menu to accompany our exploration of the area's viticultural bounty.
