Cooking outdoors allows for heat that isn't possible in most home kitchens. Cooking outdoors provides a lot of opportunities for flavor. Open fire allows for high heat that isn't possible in most home kitchens. Come and experiment with us! This course will encourage people to cook fluidly and let simple ingredients shine. What to expect:Global cuisines were birthed from using what was available in their regions. We will talk about sustainable agriculture and honor this by focusing on local food. By the end of this course, you will be more confident in your own cooking and learn about the beautiful ingredients New England has to offer. Requirements:No experience required. What to Bring:plates/containers, eating utensils Instructor: Christina ColanduonoChristina Colanduono has been as a sous chef at Benedetto in Cambridge, MA. Christina was born and raised in the restaurant industry. Her family has owned and operated a delicatessen/catering business for 50 years. She started cooking at a young age. Her foundation was built on transforming humble ingredients. She worked at several restaurants near Providence, RI before starting at Benedetto. She specializes in fresh pasta and animal butchery. When not working, she's reading cookbooks and experimenting at home. Her passion is ingredient sourcing. Through this she has built up connections with farms and specialty producers all over New England. Certifications: ServSafe Manager Certified.
