Course 1 - Grouper Ceviche- coconut curry, pineapple, crispy shallots. Paired with Beaumont Chenin Blanc
Course 2 - Roasted Yams- harissa, aleppo honey, fried peanuts. Paired with Stolpman Roussane
Course 3 - Seared Tuna- berbere spice, creamed spinach, herbs. Paired with Cooper Mountain Organic Pinot Noir
Course 4 - Wagyu Strip- charred onion, miso, fig, arugula. Paired with Weinert Cavas de Weinert
Course 5 - Manchego cheesecake- sourwood honey, sea salt, blackberries. Paired with Naveran Cava Dama
