Five course global passport wine and tapas pairing dinner Five delectable courses expertly prepared and presented by Chef RL Boyd paired perfectly with five wines from different countries and led by Andrew Mehring from Winebow Wines. Course 1 - Grouper Ceviche- coconut curry, pineapple, crispy shallots. Paired with Beaumont Chenin Blanc Course 2 - Roasted Yams- harissa, aleppo honey, fried peanuts. Paired with Stolpman Roussane Course 3 - Seared Tuna- berbere spice, creamed spinach, herbs. Paired with Cooper Mountain Organic Pinot Noir Course 4 - Wagyu Strip- charred onion, miso, fig, arugula. Paired with Weinert Cavas de Weinert Course 5 - Manchego cheesecake- sourwood honey, sea salt, blackberries.
