For 20 years, Brickmaiden Breads has been crafting organic, naturally leavened sourdough loaves in our small bake house, adjacent to the beautiful Point Reyes National Seashore. We are known for our quality and commitment to sustainability. As a team, we spend long days performing very physical work in pursuit of excellence. The finished product relies not on our set recipes, but our bakers' skill, intuition, and understanding of sourdough cultures. Between mixing, hand-shaping, and baking our thick crusted loaves, we are in deep discussion of how to get the best possible loaf out of the day's variables: flour quality, weather, and starter performance. Our days are long, but the pride we take in our finished product keeps us motivated, focused, and fulfilled. It is a labor of love, and we are looking for a like minded individual to join our team. We have an immediate opening for an experienced baker. Strong preference will be given to those with prior experience working with high hydration sourdoughs, but we are willing to train the right individual. Position is 25-30 hours a week to start, and will become full-time in the Spring. The schedule will eventually include 1-2 early morning shifts (start time 1-2am). Weekend availability is a must. Job Description Our days in the bakehouse are divided into three equally important roles: mixer, shaper, and baker. We cross-train each individual, as we believe a comprehensive understanding of our products- and naturally leavened bread in general- cannot be achieved through only participating in one area of our production process. We also find that moving between roles keeps us in better communication with each other, creates a healthy, fluid work environment, and cultivates the best bakers! Each shift comes with a specific set of responsibilities, but the common thread throughout all shifts is an attention to detail! Sourdough bread is a natural process that is subject to many variables outside the parameters of a set recipe, so our bakers must be fully engaged with the process each day. The ideal candidate must: Have at least one year experience in a professional kitchen, preferably in a baking capacity Be a strong communicator, both spoken and in writing, including texts and emails Be physically capable of the job requirements, including lifting 50 lbs and standing for ten hour shifts Have weekend and early morning availability Have the ability to work quickly and efficiently, while maintaining an organized work space Be collaborative and driven Job responsibilities include: Following written recipes Cutting, scaling, and hand shaping dough, to order Baking off products in our 4 deck, wood-fired oven Building and maintaining a fire Feeding starters Packing orders for delivery Maintaining a dough log Cleaning and performing maintenance on all the equipment Ideal candidate is communicative, reliable, organized, and passionate about baking. As a small business, we rely on each employee to step in wherever help is needed, and to care for the space and equipment with thorough cleaning and proper maintenance. Pay is $16-$20, based on experience. We offer shared tips, sick pay, a match IRA after one year, and paid vacation after two years. Our town is a wonderful place to live, but it is rural, without many of the amenities of a larger city. Rentals in the immediate area are very limited, and most of our employees commute 30-45 minutes from Petaluma, Novato, or Fairfax.
