Lebanese Nachos!
This dish, fattet hummus bi laban AKA Lebanese nachos, is one of my favorite things: a delicious mix of textures, temperatures, and flavors. In order to achieve this, some assembly is required. This meal will feed 2 hungry people:
Crispy Arab bread
Garlicky stewed chickpeas
Herbed tahini yogurt
Fried pine nuts
Instructions: spread crispy bread on a large platter (to share) or on individual plates. Heat up chickpeas - or don’t, I’m not trying to tell you how to live your life - and spread over the bread. Pour yogurt all over. Sprinkle with pine nuts. Get in there.
Want a meatier Monday? Add 1lb of Kefta (grilled ground lamb kababs).
