Please join us for a twist on a French-inspired five course chef dining experience curated by Strang Chef Collectives chef, Cole Suchka. Chef Suchka is the Chef de Cuisine of Tora Zushi at our flagship chef collective, Strang Hall. Enjoy an evening full of fresh, unique flavors as Chef Cole showcases his French cuisine techniques with a melting pot of ingredients reflecting his varying culinary experiences. Complete the experience with thoughtfully selected wine pairings to compliment each course for an additional $20. Tickets are priced per person. Limited availability, snag your tickets today! - THE MENU - + Course I | Belgian Endive: Single endive cup filled with triple cream brie, topped with macerated pomegranate and basil , seasoned with lemon salt + Course II | Steak Tartare: Minced filet mignon, quail egg, wasabi aioli, finely diced pickled garlic, shallot, and ginger; herbed with basil and cilantro and lemon zest and garnished with daikon sprout. Served over vegan chicharrones + Course III | Cassoulet a la Scallops: Braised cannellini beans with pancetta, topped with seared scallops and a spinach and shishito pepper chimichurri purée, garnished with a parmesan frico and lemon zest + Course IV | Coq Au Vin: Frenched red wine braised chicken legs, sautéed pearl onions and chanterelle mushrooms, potato fondant, red wine au jus reduction sauce, garnished with rosemary salt + Course V | Miso Caramel Apple Tarte Tatin: Shaved and rolled Granny Smith apples baked under puff pastry with white miso caramel, topped with a lemon mascarpone quenelle and garnished with mint - WINE PAIRINGS - Courses I & II: Chronic Cellars Sparkling Spritz & Giggles, California Course III: Chehalem INOX Chardonnay, Oregon Course IV: Albert Bichot Pinot Noir, France Course V: Italian Sgroppino with a twist About Chef Cole Suchka: It starts with passionate chefs. Chefs with plenty of real-world experience, a culinary sense of adventure and an entrepreneurial drive. Chef Cole Suchka of Tora Zushi, our inspired itamae concept located at our flagship chef collective Strang Hall, possesses all of those qualities and more. A Texas native, Chef Cole first stepped foot into the kitchen at age 15 and never looked back. Chef Suchka attended Johnson & Wales University for Culinary Arts in North Carolina where he further immersed himself in the culinary world becoming classically trained in French cuisine and techniques. Chef Suchka has acquired deliciously rich and diverse experiences in the culinary world over the years curating dishes in a variety of cuisines across the nation from California to Chicago to NYC.
