Drink pairing: White Dragon made with Milagro Blanco, Pierre Ferrand Dry Curacao, Lemon, Egg White Course 2 Adobo-Miso Marinated Cod served over an Esquites salad with Spinach and Mirliton. Chicharron Tamale with Crispy Pork Skin and Pork Belly over a Corn Masa garnished with Cilantro, Crema, and Cotija.
