The Gastronomic Union of Tucson returns to The Carriage House in downtown for a special event in collaboration with Tucson: City of Gastronomy and Brink Media, who will be filming the dinner to capture the magic of GUT.
5 courses of innovative cuisine from teams comprising over two dozen of Tucson's finest chefs, featuring contemporary interpretations of the heritage ingredients of Tucson and the Sonoran region. A cocktail and local wines will accompany the meal.
Course 1: Sea of Cortez Shrimp and Local Pork Bao Pastor, Pineapple/Chile Crunch, Foie Gras Ganache, Agua de Jamaica Pickled Local Vegetables
Course 2: Local Spoon Lamb, Honey Pot Mosaic, Masa Tostone, Chiltepin Chimichurri Foam, Black Nopal Sauce
Course 3: Pork Sausage Stuffed Quail, Chickpea Panelle, Crispy Ceci, Lemon Whipped Goat Milk Yogurt, Pomegranate Arils, Pomegranate Demi Glace, Membrillo Puree, I'itoi Onions
Course 4: Beef Duet, Parsnip Puree, Pickled Butternut Squash, Masa Breaded Cholla Buds, Ajo Fond Blanc de Veau
