Join us at Whistle Pig for this pairing dinner and learn about pairing Mediterranean cuisine with American wines. The cuisine is by Chef Dani of the Uncommons, and will feature the exquisite wines of Foris Wines of Rogue Valley, Oregon. The evening will begin at 6 PM with course 1 of a delicious 7-course dinner. Chef Dani, and Whistle Pig have created a multi-course experience that will tantalize your palate. Course after course of Mediterranean-inspired dishes like Ceviche, Sea Food Bouillabaisse, and a surprise Amuse Bouche will provide the first three courses with pairings from Foris including their remarkable Pinot Gris, the Riesling, or maybe even the Gewürztraminer. Each course will be explained by our tasting Sherpas. Chef Dani will explain each dish breaking down the flavors while our Wine Guide, from Maverick Beverage Company, Alex Tomson will take on a journey of discovery through the beautiful hills and valleys of Foris Wine. Our Salad course will be a citrus and fennel mini wedge salad with a strawberry-kiwi dressing made with Whistle Pig's Sheep Feathers IPA. The entrée will feature brie, apple, pinion nut stuffed pork tenderloin with a Belgian gold reduction and a colorful array of whole carrots (Vegetarian option available upon request). These courses will see us pour 2 more of the wines from Foris. Each course will feature a special pairing through 5 dinner courses. There are bound to be surprises along the way. Our final 2 courses will provide us with Med traditional courses of Dolce and Caffe followed by a splendid Aperitif of Limoncello, an Amaro, or fine port.
