In March and April, 2023, Jay Ducote is embarking on an epic road trip across the eastern United States. A large part of this road trip will be dedicated to cooking one of Louisiana's favorite cultural dishes, jambalaya, at a series of farmers markets, breweries, and other collaborations.
Cajun Jambalaya, made with pork, chicken, and smoked sausage, brought together with the Holy Trinity of Cajun cooking, and featuring Louisiana long grain rice, is perhaps the most quintessential dish that represents the Bayou State. From the United Way's Jambalaya Jam in downtown to the world famous Jambalaya Festival in Gonzales, we cook jambalaya at everything from church fundraisers to LSU tailgate parties.
