Trinh and Thai Nguyen are thrilled to welcome Melissa Miranda to Ba Sa for a guest chef dinner on Wednesday,April 5. Miranda, the chef and owner of Seattle’s highly acclaimed Musang, is revered for her Filipino cuisine and commitment to community. She was recognized by Food & Wine as one of the Best New Chefs in American for 2022. “Thai and I are super excited to cook with Melissa,” said Trinh Nguyen, chef/owner of Ba Sa. “We’re looking forward to introducing our guests to her amazing food.” Miranda will create a multi-course tasting menu that showcases Filipino dishes and flavors for guests to enjoy. The menu for the evening is as follows: isa Kinilaw -kombu cured steelhead, cane vinegar, black garlic, micro greens Dalawa Ginataang Alimasag- dungeness crab, caviar, coconut and squash cream, scallions, black sesame rice cracker Ensaladang Tagsibol snap peas, green papaya, cherry tomatoes, purple cabbages, fish sauce, dalandan, fried shallots Pancit Palabok shrimp and pork ragu, grilled argentine langoustines, palabok noodles, smoked tinapa, scallions, eggs Bistek Braised then grilled beef short rib, charred onion and coconut cream, charred sweet onions, pickled red onions, scallions panghimagas Banana cake, jackfruit sorbet, fried Lumpia Paper Musang is a community driven restaurant inspired by childhood memories of Filipino food. The six-course tasting menu is $150/person plus tax and service charge. Wine, cocktails, and beverages will be offered for additional cost.
