This exquisite French classic is often the star of special events such as weddings, baptisms, engagement parties, and many more. The croque en bouche combines many recipes and while hard work, it is so rewarding. For this class, first I will demonstrate how to build the large traditional size of a croque en bouche. Second, we will work on the recipes needed such as pate a choux, crème patisserie, craquelin, and sucre cuit.The most exciting part is all attendees will go home with a kit to make their own mini croque en bouche. This kit is for 5-6 people and will come with petit choux filled with crème patisserie, a nougatine base, traditional French candies, dragee, and sugar flowers.
