Opening Reception: passed BBQ brisket tostadas (vegetarian option of BBQ mushroom tostadas)
First Course: Sopa de Camarones con Palomitas - lobster & shrimp bisque thickened with buttered popcorn + chile guajillo + ajo negro.
Second Course: Tijuana Style Caesar - adobo brussels + toasted pepitas + cotija cheese.
Third Course: Taco de Costilla - 12 hour beef shortrib taco + Guajillo jus + potato crema + pickled cabbage + smoked cheddar. (vegetarian option: Taco de Chile Relleno - cheese & squash filled poblano chile + salsa roja + crema + cilantro).
Dessert: Tres Leches - gingersnap cookie + brown butter custard.
