First tasting the wines of Fermi Bohigas. An outstanding cava producer with Robert Parker’s Wine Advocate named “One of Four Producers Raising the Bar in Penedes’. We will taste their traditional Cava Brut Reserva and their Rosat (Rose) Cava. Moving on to the region of Utiel-Requena, just northwest of Valencia, which produces some of Spain’s greatest value wines from grapes like Macabeo and Bobal. These organic wines from Bodegas Sierra Norte’s ‘Ananto’ lineup are wonderful 3L box wines that are sure to become daily-drinker favorites. About Ines Oro Ines was born in Bilbao, in the Basque Country of Northern Spain. She earned a degree in Business Administration from the University of the Basque Country. Fluent in Spanish, English, French and Italian, Ines knew that she wanted to put her linguistic skills to use in business, and found the perfect fit with her passion for wine. Her first job in the wine industry was in 1995, and since then she has worked in various sales roles. Moving to the United States, she began working as a sales manager for the Americas for some of the main wineries in Rioja and other Spanish appellations like Cava, Rias Baixas, Ribera de Duero, and is currently working for Terra Nostra de Vinos, a group of five family-owned Spanish wineries. Ines now lives with her family in a small town in southern Connecticut with her husband and two daughters.  Blend of 50% Xarel·lo, 30% Macabeo, 20% Parellada. Very fruity aromas, especially of white fruit (acid apple and pear) on shades of peel of citrics and white flowers. In the background, some spicy notes owed to ageing (cinnamon) and cookies. The bubble lends a creamy feeling, and it gives volume and softness to the structure that returns acidity and widens the aromas of white fruits and spices that are repeated in the mouth. Its balanced end harmonizes its acidity, and leaves a memory of freshness and volume owing to its light sugar content. Cava, Spain Bohigas Cava Rosato NV
 Dusty, creamy aromas of yeast, oak and vanilla open this rosé. The palate is more crisp and pure, with scouring acidity and overall tightness. Cranberry, red plum and briny flavors finish fresh and citric, with a hint of stony minerality. Ananto Cava Brut Blend of 70% Macabeo, 20% Chardonnay and 10% Xarel·lo. Pale yellow color, clean, with greenish hues and fine, abundant and persistent bubbles. Aromatic, well balanced and fresh. This cava offers aromas of white flowers, pineapple, pear and subtle notes of toast. Creamy and fresh, refined and smooth with a very long and persistent aftertaste of citrus.  100% Macabeo, pale yellow, clean with green tinges. Aromatic, well-balanced and fresh. This white wine offers pleasant acidity that complements perfectly the aromas of flowers, fruit and herbs that show through in the finish. Ananto Utiel-Requena Bobal Rosado, 3 L Box

 This rosé is made using the traditional saignée method after the must has macerated with the skins. A temperature-controlled fermentation is then done, bringing out the full potential of this grape variety. A lovely, clean, brilliant raspberry color. Fruity and intense on the nose with well-defined varietal aromas. Fresh on the palate with pleasant flavors. Very well-structured.
 Ananto Utiel-Requena Bobal & Tempranillo, 3 L Box
 Blend of 65% Bobal and 35% Tempranillo. A youthful clean, dark garnet-cherry color. Complex aromas of red berry fruit (strawberry and blackberry), good fruit expression, lively and complete. The wine opens out on the attack on the palate and shows an impressive array of flavors, great intensity and very good balance. Ripe, soft tannins bring a sensation of harmony.
