Hózhó ... roughly translated, means beauty, balance, peace and harmony. One of the most important words in the Dinè language. Danielle Goldtooth is a mixologist, farmer, forager, and co-owner of Dii IINÀ- Food from Start to Finish.
She is joined in her passion about Food Sovereignty and connecting the community through self-sustaining practices by her husband, Chef Alan Moore. Together they created a menu with ingredients sourced from Local or Indigenous Farms and Ranches in a special collaboration to showcase how Community Food Sovereignty can work. How to care for the land and having compassion for one another creates a community with the most Love.

welcome cocktail: plush port punch (english milk punch)
first course: seared lamb loin medallions with arugula, seasonal fresh farm veg, goat cheese, juniper/sumac vinaigrette
cocktail: "Wine down the Canyon": arizona white wine, citrus shrub
second course: braised rabbit with red chili wojapi, mashed cassava, roasted seasonal farm veg
cocktail: "The Baaad Chili"; dark rum, red chili and steamed corn steeped in sweetened goats milk
third course: roasted squash on a bed of fried greens, seasonal berry gastrique, roasted carrot/garlic puree, micro greens (vegan, gluten friendly)
cocktail: sumac sour: gin, sumac syrup(NAPI), arizona lemon juice. sugar, lemon zest rim
fourth course: sweet potato cake with butterscotch, herbed creme anglaise, fresh berries topped with pinion pralines.
cocktail: mezcal monsoon- mezcal, house-made AZ citrus cordial, bitters, lime peel, creosote branch.
