This workshop will walk you through the steps of preparing Pollo Saltado, or “Jumping Chicken,” a Peruvian staple that pays tribute to a great Asian migration in Peru in the 19th Century. This dish uses wok stir fry techniques set against a vibrant cast of South American Ingredients.
