Our "Pantry Challenge" is to make this hearty supper soup using whatever vegetables you've got on hand along with some whole grains and protein. The only must-have ingredients are onions or garlic, tomatoes in some form: fresh, canned, dried, whole or smushed, and salt. These three magic ingredients will enable all the others to play nicely together and will guarantee that your soup is so savory, everyone will want seconds!
To prove our claims, we'll be making the soup with whatever vegetables are available at the People's Place Food Pantry - and everyone will get a taste!
