Tiffany Ran: "Rather than striving toward authenticity, we embrace the notion that cuisines around the world undergo a subtle yet gradual change influenced by migration, history, trade, and storytelling. Taiwan is no exception; its cuisine changes, adapts, and evolves constantly to simultaneously celebrate traditions while adopting new trends. Our dishes pay homage to the variety of flavors represented in this cuisine, but we're also part of the storytelling and migration that inevitably makes Taiwanese cuisine and its portrayal just a little bit different.
"Ba ba lio," or 8-8-6 in Chinese, is the international calling code to Taiwan, a string of numbers that tethers me to one home as I struggled to build another in a new city. BB6 Taiwanese Pop Up was born from homesickness and driven by discoveries. While our dishes are born of old Taiwan flavors, they're also peppered with new Pacific Northwest elements."
