We’ll guide you through pairings of sweet treats created with wine and spirits. Raspberry Mimosa Cupcake paired with Cleto Chiarli Brut Rosé CHIARLI 1860 is the oldest producer of Lambrusco and other wines in Emilia. The winery was founded in 1860 by Cleto Chiarli who, until that date, managed the “Trattoria dell’Artigliere” in the center of Modena and was already producing his own Lambrusco for the habitués of his restaurant. Chiarli has faithfully handed down from generation to generation the rigorous principles of seriousness, honesty and the greatest respect for quality, thus ensuring the appreciation and affection of an ever increasing clientele. Violet-shaded rosé, delicate, well-structured, with intense fragrances of strawberries, raspberries and a lively round taste. James Suckling: 90 pts Tiramisu Cup paired with Lac Coeur – Coffee Liqueur Made by Loon Liquor in Northfield, MN, a wheat and barley vodka-based liqueur that infuses Peace Coffee’s Yetti cold press with vanilla beans, cocoa nib simple syrup, and molasses. Rich notes of chocolate, caramel, and coffee. This elixir stars with a lush drizzle of honey, leading to an undercurrent of maple, washing away to a warm clean finish. Certified organic iIngredients: Peace Coffee’s Yetti Blend Cold Press, vanilla beans, cocoa nib, cane sugar, molasses, unmalted wheat, unmalted barley, malted barley, yeast, water Red Wine Brownie paired with Langmeil Hangin Snakes Shiraz The Hangin’ Snakes Shiraz is ripe with juicy berries flowing onto the palate which is medium bodied, with soft and velvety tannins adding a lovely structure and texture to the wine while sweet and briary spice balances the juicy fruit through to the finish. This wine is made from 10-20 year old vines and matured in old American and French oak. Barossa Valley, Australia Whiskey Caramel Donut Hole paired with Far North Bødalen Bourbon Whiskey Single estate bourbon whiskey recognized as Best Bourbon in Minnesota by the American Craft Spirits Association, 2019. Aged in Minnesota-made oak barrels for 18 months. Bødalen is named for an idyllic Norwegian valley on the edge of a massive glacier. The mash bill is 60% heirloom corn, 30% Hazlet rye and 10% malt barley. Nose offers aromas of toffee, sweet corn and orange zest. The entry is both peppery and vegetal, with a woodsy depth. The finish is surprisingly long, rich and persistent with notes of bitter chocolate and brown sugar. Coffee Baba au Rhum (Rum) Mini Bundt paired with Far North Ålander Nordic-Style Spiced Rum Made in small batches from domestically sourced Demerara and Turbinado sugar. We use whole bean spices commonly found in Scandinavian baking and infuse them by hand. No artificial color or flavors are added. Showing a nose of allspice, nutmeg, clove and ginger snap cookies, Ålander is both complex and exceptionally focused, like angels dancing on the somewhat crowded head of a pin. It has background aromas of mocha, cardamom and butterscotch, that give way to root beer, vanilla and a touch of peppermint. All combined by a smooth texture with clean, crisply defined flavors, Ålander Rum finishes with sweet notes of caramel and banana bread. Top 100 Spirits of 2017 – Wine Enthusiast Simple Lemon Liqueur Cake paired with Il Gusto di Amalfi Limoncello Liqueur ‘Il Gusto di Amalfi’ is a tiny company that takes organically-grown lemons from the hillsides of the Amalfi Coast (near Tramonti), peels them by hand with potato-peelers in small batches, and macerates them in pure grain alcohol in stainless steel vessels like very small wine tanks. (Commercial limoncello is sometimes bitter, a sign that the pith of the fruit has been accidentally included with the zest; hand-peeling avoids this.) The variety of lemon is ‘Sfusato Amalfitano’, and the groves are owned and farmed by Mario Anastasio’s friends and family. This limoncello is pure expression of an excellent raw material, and that’s it. Drink cold but not iced as a digestivo; the liqueur may need to be shaken occasionally to mix in the lemon oils that rise to the top.
