Behold! Our name sake! Our bread and butter! Our reason for living and breathing! BEEF! We wouldn't be where we are today if we didn't know our way around a large carcass. Join us for a rare sighting of our Beef Primal Class! An event unlike any other, this workshop is sure to get you familiar with whole-animal butchery. We'll demonstrate how we take a chuck primal and break it down to its sub-primals and then into case-ready cuts or trim for grinding. It's truly a sight to see! We'll be showcasing chuck eyes, denvers, teres major, flat irons, brisket, cross-cut shanks, and more! We know you typically like to get your hands dirty, but this one is demo only, folks! As always, we'll be serving you a bit of charcuterie to start, as well as some small bites from various cuts we'll cook up (come hungry!). You'll also go home with 2lbs of cuts from the primal. Every class attendee gets 10% off our retail case at the end of class too! ( Could you even want a better deal?!) Don't stop here! We're also hosting our 2nd Steak & Whiskey Tasting on Jan. 25th. That class will take us a to another stop on the beef train, where we learn about the best ways to cook up specific cuts, with a few tastes of paired whiskey on the side!
