As Tequila sought acceptance on the international stage, many producers emulated the world's other great spirits by resting their distillate in oak casks for extended periods of time. With the heat of Mexico’s summers, these spirits easily took on color and flavors from this treatment. These expressions, be they the briefly-aged Reposado, the more fully-aged Anejo, or the extensively-aged Extra Anejo, commanded adulation and high prices, leading some purists to believe all this oak aging really did was obscure the fresh flavors of agave present in a unaged, Blanco tequila. In this class we will dive head first into this debate, and with the guidance of Evan Christie, everyone decides for themselves which they prefer. Expected to taste pairs of tequilas made by the same producer but with different age statements. This will allow you to isolate what oak aging truly adds to tequila so you can analyze how the final spirits taste. Expect high-quality tequila representing the age spectrum, and expect to have a fun time tasting and discussing these spirits. Must be 21+ to attend.
