The chilly stone caves beneath our Cambridge store hold hundreds of pounds of cheese, from 80-pound wheels of Comté to delicate-rinded blues to small logs of Belgian goat’s milk cheese. Go spelunking with our expert cheesemongers and explore the science and secrets that are hidden in our caves. You’ll head underground with each to view and discuss the crucial role these temperature- and humidity-controlled rooms play in cheese aging, storage, and maintenance, and complete the lesson by tasting a few examples of what you’ve learned. Please be prepared for cave-like conditions by wearing a sweater or light jacket and shoes that may become damp.  This class will take place at our Huron Ave location on Sunday, January 8th at 5:30pm. To fully participate in the class: 1. Reserve your ticket through Eventbrite! Purchase one ticket for each member of your party. The ticket price includes admission for one as well as a cheese platter, wine, and accompaniments for one. 2. Show up on the day of class! Doors will open at 5:10pm, and class will begin at 5:30pm. Class will be held towards the back of the store near the cheese counter. Instructors will be there to guide and welcome you to the space. You will be standing for the duration of the class. After class, there will be time to tour our cheese caves as well as shop our expansive product selection (at a 10% discount!).
