Winter Squash and Leek Risotto This creamy and warming dish is a perfect lunch or weeknight meal that celebrates the flavors of the season. We will utilize a whole butternut squash in two different ways – both infusing the stock and adding it to the risotto. I love this dish because it is employs various cooking techniques that are actually simple, they just take a bit of time and care.
