What to do with chanterelles? Morels? Oysters? Truffles? From savory to sweet, we'll discuss how to work with a wide variety of delicious mushrooms and how to extract their flavors and feature them in any creative dish.
This class is mostly demonstration based and will end with a sampling of different mushroom dishes.
Jess Starwood— herbalist, forager and chef—creates an innovative yet traditional approach to herbal medicine, wild foods and connecting the community with our local natural environment. Jess’ first book, Mushroom Wanderland: A Forager’s Guide to Finding, Identifying and Using More Than 25 Wild Fungi, is available from all major booksellers. She was recognized as one of the most creative chefs in Ventura County by Edible Ojai & Ventura County magazine in December 2019 and has worked with several top Michelin-starred chefs in Los Angeles, CA to bring nutritious yet flavorful, wild foods to the table. Not only sharing a love for unique and unusual foods, Jess strives to help students cultivate an intimate, sustainable and connected relationship with the land.
