All Forward and Chase the Flavor are teaming up to kick off 2023 in the Cuyhoga Valley National Park this winter. Let’s hope for snow, bundle up and get moving. We will gather at the Purplebrown Farm Store in Peninsula and head out for a guided hike on the surrounding trails for up to 1 ½ hours (2.5 miles), various elevations.* Working up an appetite, we will return to the Store to enjoy a winter cooking demo with all local products focused on mushrooms prepared by Chef Vegan Vicki. Vegan Vicki spent many summers and hours in the kitchen watching and learning traditional cooking methods from her family. After a diagnosis of non-smoker lung cancer back in 2008, she began to research various causes of cancer. When researching Vicki knew she needed to change her lifestyle, first becoming a vegetarian, then switching to veganism. She is a self-taught vegan chef for over 12 years, who has a strong commitment in changing the way you think vegans eat. She has focused her talents on developing and perfecting vegan recipes to not only please the palate but to feed the soul. She owns Koncious Kuisine, a 100% vegan culinary services business, offering pop-ups, weekly meal services and vegan/plant-based transition coaching. She is the first vegan chef to be featured in the Launch Test Kitchen with Aramark and the Cleveland Cavaliers inside the Rocket Mortgage Fieldhouse and to have an exclusive vegan menu within the Executive Suites. She is also a featured guest chef on Cleveland’s news station Fox 8. We look forward to Chasing the Flavor together!
