About Katy: Katy Dimick grew up surrounded by a passion for food and the people who make it, going to Minneapolis farmers’ markets with her parents and creating dishes from what they found there. She entered the craft side of bartending at Parlour, where she realized that she could turn the passion and creativity she grew up with into a career. Three years later, she decided to shake things up in her life, and bought a one-way ticket to Europe. After three months of traveling, Katy returned to Minneapolis ready to try something new, and joined Hola Arepa, where she helmed the bar program for nearly 6 years. Outside of work, she creates time to give back to her community through her work with the Minneapolis/St. Paul chapter of the US Bartenders Guild, where she was on the board in the role of Charity Coordinator for four years and is currently the Events Coordinator. Taking that drive a step further, Katy, along with two friends she met while bartending at Volsteads, founded The Queens Cocktail Club. It is a creative team of female bartenders who host pop-up bar events which push the boundaries of creativity, using local, seasonal ingredients, with proceeds benefiting various charities. Mijenta Tequila Blanco  Intense aromas of cooked agave, of vanilla and caramel enhanced by the slow cooking process, and floral and fruity notes of cantaloup and peaches. An impossibly generous and round finish. Rich flavors of cooked agave, vanilla, fresh fruit and spices such as cinnamon. Mijenta Tequila Reposado Light golden hue with a powerful body. A delicate and inviting vanilla nose with notes of bergamot, honey, preserved fruits and orange blossom flowers. Rich flavors of cooked agave, hone, vanilla with a mid-palate of cacao nibs.  Beautifully balanced with orchard fruits and zesty citrus elements. A strong aroma of green grape offers a refreshingly light introduction to a bold Cognac. Bold, fruity and tangy notes come together in harmony. Juicy tones are contrasted with a zesty citrus kick offering a surprisingly pleasant acidity. Medium finish with plenty of grapiness and citrus. Fanny Fougerat Iris Poivré XO Cognac
 100% Ugni Blanc and 100% Borderies fruit. Double-distilled in an alembic still; 15% of the batch is aged one year in new oak, the rest is aged in neutral oak for 12 years. No filtration, no caramel, no sugar added. An unconventional bottling, this shows very few oak aromas; precise, pure, and floral. The current batch totaled 15 barrels. Fanny Fougerat Laurier d’Apollon Cognac 
An intriguing balance of sweet and spice. Fruity opening, with subsequent spice alluding to the treat awaiting discovery upon the first sip.Wonderfully aromatic, boasting a rich and powerful punch. Expect an opening of fruity notes including pears, apples, peaches, plums and apricots. Beneath the surface spice opens into cracked pepper, herbs, cedar wood, coffee and leather . YOLA Mezcal
 Handcrafted and organic, YOLA Mezcal follows a distinctive recipe from 1971 passed down by Yola’s grandfather. YOLA Mezcal is all about balance. Balance with nature, balance of spirit, but most importantly balance of flavor. Expect a nose of ultra clean agave flavors tinged with vibrant smoke. Pink peppercorn, ripe green fruit, and a soothing billowing backbone. The palate is bright and refreshing, yet complex with earthen mineral flavors. The finish is long and filled with smoked fruits and peppery spice. It doesn't feel sweet at all but has a subtlety that feels special. Sip this indefinitely without remorse.
