Wave Hill Breads is currently looking for a head baker. ROLE OF HEAD BAKER: The role of the Head Baker is to lead the baking team with success by taking ownership of all things related to bakery production, while, maintaining an organized and efficient process for regular operations. The Head Baker displays attention to detail, creating a vibrant culture and a healthy team setting. They execute Wave Hill Breads' high standards and hold their team accountable to these standards. The Head Baker is a part of the leadership team and is responsible for all day-to-day operations related to baking, managing and training the baking team to meet the demands of our wholesale, retail and farmer market clients, while, ensuring that products meet our high quality standards DUTIES: • Set a positive tone and strong work ethic, leading by example and with clear communications • Manage and coordinate a team of bakers and apprentice bakers • Train, educate and hold accountable the team to Wave Hill Bread's processes and policies • Keep the team motivated and working with efficiency in mind, while checking for quality and thoroughness. • Execute recipes from start to finish – knowledge about the entire baking process (mixing/fermentations, shaping, baking, cooling, storing, etc.) • Ensure all preparation is in place for a smooth and efficient production • Follow the production schedule to fulfill wholesale/retail needs. • Ensure ingredients are properly ordered, managed and consumed. • Monitor deliveries, incoming orders and stock • Manage production quantities to be baked, while, keeping waste to a minimum • Remain current on popular baking trends items/ideas • Quality control – Evaluate and discard products that do not meet WHB’s high quality of standards • Ensure equipment is properly maintained • Responsible for sanitary protocols in production, modifying checklists as needed to maintain a clean environment • Comply with all food health and safety regulations, ensuring that team members respect them as well. • Coordinates activities with regards to health inspection reports and facilitates resolutions as needed. • Perform other job-related duties as requested SKILLS NEEDED: • Communication: The ability to communicate information clearly and politely to coworkers, supervisors. This includes recognizing and fostering talent, enhancing employees’ job skills and performance through instruction, training, personal guidance and example; providing appropriate developmental experiences for skill and job growth; and helping employees learn from their mistakes through positive reinforcement. • Planning and Organizing: The ability to set priorities, plan and coordinate work activities, and obtain and manage resources so that work objectives are accomplished efficiently. • Stress Tolerance: The ability to work productively and effectively when faced with stressful work situations and time pressures. This includes maintaining stamina, patience, and effective interactions with others under stressful working conditions, and maintaining a calm, controlled, professional manner when facing high pressure and demanding situations. Educational Requirements: • Minimum 3-5 years of experience in artisan bread, viennoiserie and other related bread production. • Experience working in a high volume production environment – highly preferred • Degree from a post-secondary culinary arts training program - is a plus • Experience with equipment - a mixer, dough sheeter, oven – Non-negotiable • ServSAFE certification – highly preferred Physical requirements: • Must be able to work at least an 8-10 hour shift while standing or walking • Will be required to lift up to 50 lbs during the course of a workday • Will require bending and stooping • Will require to work with ovens in high temperatures and also within cooler temperatures during the same shift Language Requirements: • Effectively communicate in English, both oral and written forms • Bilingual abilities – highly preferred Legal Requirement: • VALID proof of eligibility to work in the United States Compensation/Benefits: • HIGHLY HIGHLY COMPETIVIE SALARY • Salary is determined based upon work experience, education, references and other credentials • Salary is based upon a 55-60 hour work week • 401(k) Retirement Plan, plus employer matching contribution • Paid time off (2 week vacation, 1 week personal/sick days) – begins after 4 months of continuous employment • Health Insurance Benefits • Year End Bonus • Employee discount **SERIOUS APPLICANTS APPLY ONLY – PLEASE DO NOT WASTE OUR TIME :) ** **THIS IS A POSITION FOR AN INDIVUAL WHO HAS/WANTS A CAREER IN THE ARTISAN BAKING INDUSTRY** This ad is not intended to be exhaustive and you are advised that the duties and responsibilities may change from time to time.
