He is a strong leader with 25 years of fine dining experience for independent restaurants, resorts, and hotel-casino properties and has worked alongside some of the best chefs in the country, many of whom have earned accolades from the James Beard Foundation or received Michelin-star status. A big part of Chef Vigil’s inspiration draws on the Latin American, Caribbean, and modern American influences he honed at the beginning of his culinary journey in the ’90s while working with two of South Florida’s original “Mango Gang” chefs, Mark Militello and Allen Susser. They were instrumental in guiding Chef Vigil to maintain his elevated attitude with fine dining and continue his course out West. Since then, Chef Vigil has helmed such notable kitchens as The Capital Grille in Seattle; Rosemary’s and Rosemary’s at The Rio, Anasazi of Santa Fe, and Twin Creeks Steakhouse; and has delighted diners at Daniel Boulud’s DB Brasserie, Stephen Kalt’s Corsa Cucina, and Hakkasan’s FIX restaurant in Las Vegas. Honored to be named by his peers as one of the nation’s best chefs in the inaugural edition of “Best Chefs America,” Chef Vigil believes in the power of food to bring people together and understands the importance of giving back to his communities and those in need.
